Amma's recipes

Am still an amateur in replicating the quality of dishes that Mum or Naani serve. But here is an honest effort to present some of my Granny's  (whom I call Amma) traditional recipes with a modern twist.

I would like to begin with one of my tastiest favourites :

Gobi Manchurian

Ingredients :

Cauliflower 1/2 Kg
(Please note that although this dish is called Gobi Manchurian, its more like )

Corn Flour
Maida
Onions - 4 medium-sized & medium-chopped
Tomatoes - 6 big
Garlic- Ginger paste - 2 tablespoons
Oil to fry

Procedure :

1. Boil water & put tomatoes in it for 5 minutes.
2. Peel them & make a puree.
3. Put  chopped onions in heated oil & fry till golden brown.
4. Take half of the fried onions aside.
5. Add Garlic-Ginger paste to the contents of pan & fry for some more time.
6. Add tomato puree to this & cook for 5 more minutes.
7. Meanwhile make a thick batter of corn-flour & maida mixed in equal quantities with salt to taste.
8. Fry cleaned cauliflower pieces dipped in this batter in pre-heated oil.
9. Put these fried flower bhajjis in the tomato gravy & serve while they are still crisp.

Please let me know if you enjoyed it.
